The name comes from the ‘Burn’ that begins in the mountains behind the vineyard which helped form the gently sloping terrace, now at about 220m above sea level.

The terrace is made up of loose, sandy loams providing excellent drainage and very little organic material. This ‘hard’ soil, along with a rainfall of less than 15 inches p.a. ensures the vines work hard to produce a light crop of highly concentrated fruit.

Then the natural abundance of thyme on the surrounding hills provides a light perfume to the grapes.

I don't make a lot of wine, and probably never will, so all the attention and effort goes into the few hundred cases of each vintage. 

At this stage there is no vineyard shop or restaurant to visit, however the many excellent venues at the surrounding vineyards are a great representation of the regions wines and overall experience.

I recommend Carrick (500m from Hawksburn vineyards), or Mt Difficulty 1km away.
